Hopefully this will change in the near future but at the moment you can only fly from Dublin to Sharm on a package deal.

Add to your troubles the fact that I really need to fly from Cork...
We booked a flight only through Budget Travel for the summer (unfortunately from Dublin to Luxor). There's not a huge saving, although we got accommodation a fair bit cheaper. We did it to avoid the Package Tour transfers of ~8 hours. A taxi from Luxor to Hurghada is only LE350!
I'll look further into bringing the family via Europe, but I don't think they'll be up for all the messing around with flight changes, etc.
